Third-generation porchetta shop in Marino Laziale outside Rome, run since 1912 by the Bernabei family. Vitaliano Bernabei's porchetta — belly and loin from small nearby farms seasoned with salt, pepper, wild fennel, and rosemary — is slow-roasted for seven hours.
